Summer (sadly) has technically come to a close, but even though your bikinis, short shorts, and that gorgeous sundress you picked up at Target will soon be packed away for next year, it’s still important to maintain your commitment to healthy, clean eating.

As a busy person who tries really hard to cook from home as much as possible, I understand that it can be difficult to find the time and energy to collect (and cook!) recipes that are A) delicious, B) easy to make, and C) healthy.

But don’t worry I’m here to help. The recipes listed below are a few of my absolute favorites, and they were all created by Gina Homolka, a wife and mom who founded Skinnytaste. I love these recipes because they’re simple, healthy, and because Gina lists the calories and Freestyle Points for those who are familiar with Weight Watchers.

Baked Chicken Parmesan

Pork Chops with Mushrooms & Shallots

Okay, full disclosure, I was really craving carbs the night I made this recipe, so I added some roasted fingerling potatoes to the dish. The secret to this delicious dish is using just a tad of real butter to cook the pork chop and then using chicken broth (not cream!) to make a flavorful, delicate mushroom/shallot sauce. Zucchini Rollatini

This low-carp recipe is killer. I didn’t have access to a grill when I made this recipe, so I tried to dehydrate the zucchini before putting the dish together. It came out a bit watery, so if you also don’t have access to a grill, try searing the zucchini ribbons in a pan before making the zucchini “ravioli.” Click here to see the recipe.

Southwestern Black Bean Salad

This cold bean salad is basically a fancy “cowboy caviar”, but it’s a lot healthier because the marinade is made up of lime juice and olive oil instead of Italian dressing, which is full of sodium and fat. Click here to see the recipe.

Cuban Style Black Beans

I’m obsessed with street-style black beans. I added barbecue chicken and broccoli to this side dish, but you can pair it with whatever you want!
